Low glycemic index
A great advantage of coconut sugar - compared to conventional sugar - is its very low glycemic index of 35. In contrast, cane sugar has a glycemic index of 68 and honey has a GI of 55. Coconut sugar is therefore also suited for diabetics as part of their diet.
After the consumption of coconut blossom sugar the blood sugar level rises slowly and blood glucose peaks are avoided. The release of insulin is reduced and blood sugar fluctuations are greatly avoided which can lead to cravings, which is usually the case after consuming regular sugar.
What is coconut blossom sugar made from?
Coconut sugar is not derived from the coconut, but from the nectar of the flower buds of the coconut palm. To do that, the flower bud is very finely scratched, so that the nectar can escape dropwise.
Then the juice is strained to remove possible contamination and boiled down to syrup by constantly stirring it until crystallised. After that coconut blossom sugar is dried and ground.
